Pat's Lots of Biscuits

This is a recipe that my family has used for years and years! 

This is a great basic biscuit recipe! You can add chocolate chips, corn flakes, ginger, dried fruit, nuts, leftover Easter eggs etc etc.

In this batch, I have used leftover Easter eggs (hollow, solid and caramel filled).


Pat's Lots of Biscuits

This recipe was created by my mum's late friend, Pat Newey and has always been my 'go to' biscuit recipe when making batches of cookies during my school days, uni, for parties, or just for fun! I have converted her recipe to a Thermomix method. Recipes are such a powerful tool and legacy to those who have passed away, and it is a privilege to post this recipe in Pat's memory.

It is a huge amount of biscuit dough, however my TM5 worked its magic perfectly with the biscuit dough + 300 grams of Easter eggs. You will need to aid of your Thermomix spatula to help mix the dough. 

PAT'S LOTS OF BISCUITS

Makes approx. 70 biscuits

Ingredients:

500 grams butter (cubed)
250 grams sugar
1 x tin condensed milk
625 grams flour
1 teaspoon vanilla
Pinch of salt
Whatever extras you like

Method:

1. Preheat oven to 180 degrees and line baking trays.

(Optional step with Easter eggs - Add 300 grams mixed Easter eggs - blitz 5 seconds/Speed 5. Set aside.)

2. Add butter and sugar to bowl - mix 25 seconds/Speed 5 (with the aid of the spatula through the MC hole). Scrape down.

3. Mix a further 25 seconds/Speed 5 (with the aid of the spatula through the MC hole). Scrape down.

4. Add condensed milk - mix 15 seconds.

5. Add flour, vanilla and salt - mix 40 seconds/Speed 5 (with the aid of the spatula through the MC hole). Scrape down.

6. Mix a further 20 seconds/Speed 6 (with the aid of the spatula through the MC hole). Scrape down.

7. Add whatever extras you like. Mix 20 seconds/Speed 5/Reverse (with the aid of the spatula through the MC hole). As it is a huge amount of cookie dough, give a quick mix through to the bottom of the bowl with your spatula as well.

8. Use a teaspoon to measure out dough, roll into balls and place on baking tray.

9. Bake for 8 to 12 minutes.


Preheat oven and line baking trays


Add 300 grams easter eggs


Blitz 5 seconds/Speed 5. Set aside


Add butter and sugar - mix 25 seconds/Speed 5 (with the aid of spatula). Scrape down.


Mix a further 25 seconds/Speed 5. Scrape down.


Add condensed milk - mix 15 seconds/Speed 5.

Add flour, vanilla and salt - mix 40 seconds/Speed 5 (with the aid of spatula). Scrape down.


Mix a further 20 seconds/Speed 6 (with the aid of spatula). Scrape down.


Add whatever extras you like - mix 20 seconds/Speed 5/reverse (with the aid of spatula)


Give a further good mix with your spatula right to the bottom of the bowl.


Spoon teaspoon sized bits of dough and roll into a ball


Place dough balls onto tray 


Bake for 8 to 12 minutes until browned


You can also add extra Easter eggs (or whatever else you want) on top of the cookies
