Healthy Choc Chip Cookies


A delicious healthier version of chocolate chip cookies! Super easy, tasty and my family looooves these!!


Healthy Choc Chip Cookies

You can customise this recipe by putting in whatever fillings you like instead of or in addition to the dark chocolate chips!

HEALTHY CHOC CHIP COOKIES

Ingredients:

130 grams butter
150 grams coconut sugar
1 x egg
1 teaspoon vanilla bean paste/extract
220 grams wholemeal self raising flour
1/2 teaspoon salt
120 grams dark chocolate chips

Method:

1. Preheat oven to 180 degrees.
2. Add butter, sugar, egg and vanilla to bowl. Mix 1 minute/Speed 5. Scrape down.
3. Add flour and salt. Mix 20 seconds/Speed 5.
4. Add chocolate chips. Mix 20 seconds/Speed 2/Reverse.
5. Spoon teaspoons of dough on lined baking tray.
6. Bake for 8 to 10 minutes or until browned.


Add butter, sugar, egg and vanilla to bowl. 


 Mix 1 minute/Speed 5. Scrape down.


Add flour and salt. 


Mix 20 seconds/Speed 5.


Add chocolate chips. 


 Mix 20 seconds/Speed 2/Reverse.


Spoon teaspoons of dough on lined baking tray.



Bake for 8 to 10 minutes or until browned.

Vegemite and Cheese Muffins

I love vegemite, I love cheese. Despite making all these sweet goodies, I'm actually a savoury gal at heart, so these...I can eat by the truckloads!


VEGEMITE AND CHEESE MUFFINS

You can spoon these into muffin cases, or directly into a greased muffin tray. Muffin cases are easier, but I find that the cheese sticks to the muffin case so prefer to put these directly into a greased muffin tray.

VEGEMITE AND CHEESE MUFFINS

Ingredients:

120 grams Parmesan cheese (cubed)
300 grams self raising flour
250 grams milk
75 grams butter
40 grams Vegemite
1 egg

Method:

1. Preheat oven to 180 degrees.
2. Add Parmesan cheese to bowl. Blitz 10 seconds/Speed 10. Set aside 2 x tablespoons of cheese.3. Add flour, milk, butter, Vegemite and egg into the bowl. Mix 15 seconds/Speed 5.
3. Spoon into a greased muffin tray, and sprinkle with set aside cheese.
4. Bake for 13 minutes or until a skewer comes out clean.



Add Parmesan cheese to bowl. 


Blitz 10 seconds/Speed 10


 Set aside 2 x tablespoons of cheese


Add flour, milk, butter, Vegemite and egg into the bowl.



  
Mix 15 seconds/Speed 5.


Spoon into a greased muffin tray...




... and sprinkle with set aside cheese.


Bake for 13 minutes or until a skewer comes out clean.

Carrot and Pear Slice

This is a quick and easy, delicious, moist and dense slice, with 1 pear and 2 carrots!

Ingredients:

2 x carrots (cut into smaller pieces)
1 x pear (quartered and cored)
230 grams plain flour
100 grams butter
80 grams brown sugar
50 grams walnuts (or sunflower seeds if nut free)
1 x egg
1 teaspoon vanilla bean paste/extract
1/2 teaspoon cinnamon

Method:

1. Preheat oven to 180 degrees.
2. Add all ingredients to bowl. Mix 20 seconds/Speed 7 with the aid of the spatula through the MC.
3. Pour and spread into slice pan. 
4. Bake for 25 minutes or until edges are browned.
5. Cool and cut into squares.


Add all ingredients to bowl. 



Mix 20 seconds/Speed 7 with the aid of the spatula through the MC.



Pour and spread into slice pan.  


Bake for 25 minutes or until edges are browned.


Cool and cut into squares.

20 Second Banana Oat Muffins

This is a quick and easy banana muffin recipe and looks great with the oat topping! This is an egg free, nut free recipe, and is easily frozen/defrosted.

20 SECOND BANANA OAT MUFFINS

Ingredients:

2 x bananas
230 grams milk
160 grams self raising flour
60 grams oats
60 grams brown sugar
75 grams butter
+ Extra oats to top

Method:

1. Preheat oven to 180 degrees.
2. Add all muffin ingredients into bowl. Mix - 20 seconds/Speed 5.
3. Spoon into muffin cases, and sprinkle with oats on top.
4. Bake for 15 minutes or until tops are browned.


Add all muffin ingredients into bowl. 


Mix - 20 seconds/Speed 5.


Spoon into muffin cases...


...and sprinkle with oats on top.


Bake for 15 minutes or until tops are browned.

4 Ingredient Date Slice

This is the easiest, simplest and tastiest slice! With just 4 x 100 grams of ingredients, this takes 30 seconds to mix together, and 15 minutes to bake!

4 INGREDIENT DATE SLICE

Ingredients:

100 grams pitted dates
100 grams oats
100 grams almonds (or sunflower seeds if nut free)
100 grams milk

Method (Thermomix):

1. Preheat oven to 160 degrees.
2. Add all the above ingredients to the bowl - mix 30 seconds/Speed 5.
3. Pour mixture into a square baking pan and press down with the back of a metal spoon until firm.
4. Bake for 15 minutes or until edges are browned.
5. Cool completely and cut into squares.

Method (Food processor/blender):

1. Preheat oven to 160 degrees.
2. Add all the above ingredients into bowl and mix on high until mixture is combined.
3. Pour mixture into a square baking pan and press down with the back of a metal spoon until firm.
4. Bake for 15 minutes or until edges are browned.
5. Cool completely and cut into squares.


Add all the above ingredients to the bowl


Mix 30 seconds/Speed 5.

Banana Bran Muffins

I love a good banana muffin!! This is a healthier version to the average banana muffin recipe (with the bran in there!). 




15 Second Banana Bran Muffins

I use Kellogg's All Bran cereal, however you can use any type of bran flake cereal. I've always thought All Bran to be an 'old person' kinda food, but now I am that 'old person' and the older I get, the more I'm really embracing this dietary fibre stuff! ;) And most importantly, my official taste testers - Ethan and Harley can't get enough of these muffins!!! Especially with a cup of milk!! Deeelicious!!

15 SECOND BANANA BRAN MUFFINS

Ingredients:

1 x banana
80 grams All Bran
200 grams wholemeal self raising flour
70 grams brown sugar
75 butter
230 grams milk
50 grams walnuts (or sunflower seeds if nut free)
1/2 teaspoon cinnamon

2. Add all ingredients to bowl. Mix 15 seconds/Speed 4.

4. Bake for 12 minutes or until skewer comes out clean.


Add all ingredients to bowl. 


 Mix 15 seconds/Speed 4.


Spoon mixture into muffin cases.



Bake for 12 minutes or until skewer comes out clean.
