10 Second Coconut Slice with Lemon Drizzle

This is a really quick, easy and light sweet treat! Coconut and lemon are a delicious combination!!!


10 Second Coconut Slice with Lemon Drizzle

10 SECOND COCONUT SLICE WITH LEMON DRIZZLE

Ingredients:

Coconut Slice

230 grams self raising flour
130 grams butter
130 grams milk
110 grams sugar
80 grams desiccated coconut
2 x eggs
1 teaspoon vanilla

Lemon Drizzle

200 grams icing sugar
60 grams lemon juice

Method (Thermomix):

1. Preheat oven to 180 degrees.
2. Add all coconut slice ingredients to bowl. Mix 10 seconds/Speed 5.
3. Pour and spread into baking tin and bake for 15 - 20 minutes or until a skewer comes out clean.
4. Cool before icing and cutting. Clean and dry bowl.
5. Add all lemon drizzle ingredients into bowl. Mix 10 seconds Speed 5.
6. Drizzle over the top of the coconut slice.

Method (Non Thermomix):

1. Preheat oven to 180 degrees.
2. Melt butter, sift flour, and mix all ingredients together in a bowl.
3. Pour and spread into baking tin and bake for 15 - 20 minutes or until a skewer comes out clean.
4. Cool before icing and cutting. 
5. Add all lemon drizzle ingredients into bowl. Stir until mixture is combined.
6. Drizzle over the top of the coconut slice.


Add all coconut slice ingredients to bowl.


 Mix 10 seconds/Speed 5.

 ...and bake for 15 - 20 minutes or until a skewer comes out clean.

Drizzle over the top of the coconut slice.
