Eucalyptus Multi Purpose Spray

I am currently obsessed with Eucalyptus oil for cleaning! I use it to clean/deoderise the toilets, I add a capful with my clothes in the washing machine, cleaning the boys bath, and I looove using it with hot water to mop the floors! I love the smell and everything feels squeaky clean! So I thought I'd make up a multi purpose spray for the kitchen, bathroom and to clean up after two messy toddlers!!

I bought the spray bottle for $2 at the Reject Shop and have seen them at dollar shops, and Coles/Woolworths etc. Ends up so much cheaper than buying a multi purpose spray, and I don't freak out about inhaling it like I do with all the chemical based sprays! In fact, it's fantastic for the sinuses!!! ;)


EUCALYPTUS MULTI PURPOSE SPRAY

Ingredients:

250 grams water
140 grams white vinegar
5 grams dish washing concentrate
5 grams Eucalyptus oil

Method:

1. Add the above ingredients to the bowl. 
2. Mix 1 minute/80 degrees/Speed 1.
3. Pour into a spray bottle. 

Note: Shake bottle before use.


Add all ingredients to bowl


Mix 1 minute/80 degrees/Speed 1


Decant into a spray bottle and enjoy!

The Body Building All-In-One Meal (aka. The 'Zac Efron' Diet)

So...my husband has decided that his body goal now is to look like Zac Efron in his latest Baywatch photos!!! :) :) ...yep...don't see me complaining there!! :) :) My husband is generally very fit, but after the boys were born didn't get much time to work out. Now that they are a little older, he's hitting the gym again and he asked me to prepare a high protein diet with lots and lots of vegetables to get his body building body back!

On Twitter, Zac Efron wrote that his diet consisted of:

“9 days of absolutely zero carbs & sugar. Only organic grass fed/free range protein and organic leafy greens.”

I wanted to make up easy to heat up containers to keep in the freezer so my husband can just take it out and quickly heat up (as he tells me that body builders are supposed to eat many meals a day to keep their metabolism up!). So, the leafy greens are out as that would need to be prepared freshly each meal (and I'm not always around to be his personal chef!), plus I wanted to use up all the vegetables I had in the fridge (cauliflower, brussel sprouts, corn and carrots). Also, I would have liked to use all chicken breast (I'll use them in my next lot!), but I wanted to use up the chicken I had in the freezer, so used some drumsticks and chicken thigh fillets. I added flavour to the chicken and vegetables by steaming them along with soy sauce and garlic.

THE BODY BUILDING ALL-IN-ONE MEAL 
(AKA. The 'Zac Efron' Diet)

8 servings

Ingredients:

1200 grams Water
50 grams Soy Sauce
1 tablespoon minced garlic
300 grams Chicken Breast (or any other pieces of chicken you have...the breast is the leanest part though)
Mixed Vegetables (i.e. Corn, Carrot, Brussel Sprouts, Beans, Brocolli - cut into smaller bite sized pieces)

Method:

1. Add the water, soy sauce and garlic in the bowl.
2. Place the chicken pieces in the 2 levels of the Varoma steaming tray.
3. Cook 15 minutes/Varoma/Speed 4.
4. Add the mixed vegetables in the steaming basket, and among the chicken in the Varoma steaming trays.
5. Cook a further 20 minutes/Varoma/Speed 4.
6. Distribute evenly between 8 plastic containers, and let it cool down.
7. Cover the containers with lids and place in the fridge/freezer.


Add water, soy sauce and garlic


Place chicken pieces in the 2 levels in the Varoma steaming trays
Cook 15 minutes/Varoma/Speed 4


Place mixed vegetables in the steaming basket and among the chicken pieces
Cook 20 minutes/Varoma/Speed 4


Distribute between 8 plastic containers

5 Second Chia Seed Pudding

I used to eat this everyday when I was actively trying to get pregnant/found out I was pregnant, and wanted to put super healthy food into my body! I'm not generally a health, superfood kind of person, but when it came to my pregnancy, I was moreso than usual! Now that I need more energy and need to be more organised with two toddlers, I have started making my Chia Seed Pudding's again so it's all ready to go for breakfast, or for a snack.


Chia Seed Pudding

5 SECOND CHIA SEED PUDDING

3 Servings (fits into 3 x 150ml glasses)

Ingredients:

50 grams Chia seeds
25 grams oats
25 grams ground LSA (linseed, sunflower, almond)
20 grams sunflower seeds
20 grams slivered almonds
20 grams desiccated coconut
50 grams pitted dates/medjool dates (pitted)
1 tablespoon Vanilla bean paste
350 grams Almond milk (or any other milk of your choice)

Method (Thermomix):

1. Add all the ingredients into the bowl.
2. Mix 5 seconds/Speed 6. 
3. Pour into glasses/containers and eat immediately, or place in fridge to set for a few hours/overnight.

Method (Non-Thermomix):

1. Chop the dates very finely.
2. Add all of the ingredients into a big bowl and stir together with a spoon/spatula.
4. Pour into glasses/containers and eat immediately, or place in fridge to set for a few hours/overnight.

The Chia seeds are crunchier when eaten soon after being mixed with liquid, the longer you leave it to set, the Chia seeds expand and the consistency turns into a pudding and 'gelish' texture.

I add the dates for a natural sweetener, and the sunflower seeds and almonds for some texture (even though the LSA already has it in a ground form). You can mix it up and substitute with different ingredients or flavours - i.e. cacoa/cocoa powder instead of vanilla bean paste.

You can also add and mix fresh fruit or berries through, however it would need to be eaten within 24 hours or it tends to get a bit 'funky'. I like to keep it plain so it can be kept in the fridge for a few days and ready to go when I want some pudding!


Add all ingredients into the bowl


Mix 5 seconds/Speed 6


Eat immediately, or leave in fridge to set for a few hours/overnight. Can be left in the fridge for a few days ready for your consumption!

Healthy Golden Gaytime Easter Eggs (NF)

These are healthy nut free and refined sugar free Easter eggs which are a great alternative to the traditional chocolate Easter eggs, great for the whole family!!!! They are great for the Easter egg hunt, Easter presents for both kids at school and for adults, and are a perfect kids in the kitchen activity!

I've been working on a healthy Golden Gaytime for my husband as that is his No. 1 icecream flavour (I have been making him a Golden Gaytime Icecream Cake for his birthday every year - http://thermotwinning.blogspot.com.au/2015/07/golden-gaytime-icecream-cake.html)
 
I have made this nut free so it is lunch box friendly. The rice bubbles for the Golden Gaytime 'crunch', vanilla bean paste and maple syrup to get the caramel flavour, and cocoa powder for the chocolate. These are DELICIOUS!!!!!!!!!

Note that the cocoa/cacoa powder is quite bitter which goes really well with the sweet 'egg' part and together makes it taste like it had a hint of dark chocolate. If the bitterness bothers you, you could coat in a drinking chocolate (with added sugar), blitzed up choc chips, dessicated coconut or leave it coating free :)
 
To wrap them up into 'Easter Eggs', I used the cheapest aluminium foil I could find from Coles, as it is nice and thin - the stuff I normally use from Costco is a lot thicker and doesn't wrap as nicely around the egg shape (Coles Smartbuy foil - about $1.10 for 10m - bargain!), and I bought a $2 pack of 100 Easter stickers from the reject shop.
 
HEALTHY GOLDEN GAYTIME EASTER EGGS
 
Ingredients:
 
100 grams oats
160 grams medjool dates (pitted)
10 grams chia seeds
2 teaspoons vanilla bean paste
10 grams maple syrup
40 grams coconut oil
25 grams rice bubbles/puffed rice
Cacoa or cocoa powder to roll eggs in
 
Method (Thermomix):
 
1. Add the oats, dates, chia seeds, vanilla, maple syrup and coconut oil.
2. Mix 15 seconds/Speed 8.
3. Add the rice bubbles and mix 15 seconds/Speed 2/Reverse.
4. Use a spoon to measure out a spoonful of mixture and roll/shape into an egg shape (make sure to get excess rice bubbles from the bottom of the bowl so that you get an even mixture)
5. Roll the egg in cacoa/cocoa powder and place in fridge to set for at least an hour.
6. Once the egg's have firmed up, wrap in pieces of aluminium foil and decorate with Easter stickers (optional). You can wrap with aluminium foil straight after making them, but I find it easier once they have firmed up.
 
Method (Blender/Food Processor):
 
1. Add the oats, dates, chia seeds, vanilla, maple syrup and coconut oil.
2. Mix until all the ingredients are combined.
3. Add the rice bubbles and do a quick turbo mix, you may need to further mix with a spoon/spatula - try not to blend it too much as you may lose the rice bubble crunch!
4. Use a spoon to measure out a spoonful of mixture and roll/shape into an egg shape (make sure to get excess rice bubbles from the bottom of the bowl so that you get an even mixture)
5. Roll the egg in cacoa/cocoa powder and place in fridge to set for at least an hour.
6. Once the egg's have firmed up, wrap in pieces of aluminium foil and decorate with Easter stickers (optional). You can wrap with aluminium foil straight after making them, but I find it easier once they have firmed up.
 
You can make these as bliss balls (when it's not Easter) for healthy Golden Gaytime treats! You can also use my other bliss ball recipes and roll them into an egg shape like this too! However, the taste and crunch in these Healthy Golden Gaytime Easter Eggs will definitely be a winner with the kids!!!
 
 
Add all ingredients (except for rice bubbles) in bowl
 
 
Mix 15 seconds/Speed 8
 
 
Add rice bubbles
 
 
Mix 15 seconds/Speed 2/Reverse
 
 
Spoon out a tablespoon of mixture
 
 
And shape/roll/press into an egg shape
 
 
Roll in cacoa/cocoa powder
 
 
Place in fridge to firm up for at least 1 hour
 
 
Cut small squares of cheap aluminium foil
 
 
 
Wrap Egg inside the foil and press the foil around the shape so it's nice and firm
 
 
Press foil around the egg
 
 
Secure the end of the foil with stickers and decorate with more stickers :)
 
 
Repeat the above for all of the eggs

30 Second Coconut Cupcakes (GF)

I loooove coconut flavours in baking, so experimented a bit to make cupcakes that are gluten free and refined sugar free!
 
 
30 Second Coconut Cupcakes (GF)
 
I used Pandan paste in this batch to make Pandan Coconut Cupcakes (love this flavour combo!) however this is a very versatile recipe and this recipe can be modified to make different flavoured cupcakes:
  • 1 teaspoon Pandan Paste (Pandan Coconut Cupcakes)
  • 1 teaspoon coconut essence (Coconut Cupcakes)
  • 20 grams cacao powder/cocoa (Chocolate Coconut Cupcakes)
  • the zest of 1 orange (Orange Coconut Cupcakes)
  • the zest of 1 lemon (Lemon Coconut Cupcakes)
  • 1 teaspoon vanilla paste/essence/extract (Vanilla Coconut Cupcakes)
30 SECOND COCONUT CUPCAKES (GF)

Makes 12 cupcakes
 
Ingredients:
 
100 grams butter
100 grams coconut flour
100 grams coconut sugar
60 grams desiccated coconut
80 grams milk (of your choice)
4 eggs
1 1/2 teaspoon bicarb soda
Essence/zest/extract/paste of your choice (see above^^)
 
Method:
 
1. Preheat oven to 160 degrees.
2. Add all the above ingredients into the bowl.
3. Mix 30 seconds/Speed 6.
4. Spoon and distribute into 12 large cupcake patties.
5. Bake for 13 - 15 minutes or until a skewer comes out clean. 
 
 
Add all ingredients to bowl
 
 
Mix 30 seconds/Speed 6
 
 
Spoon into 12 cupcake patties
 
 
Bake for 15 minutes at 160 degrees (preheated)
 
 
Serve with dusted icing sugar - optional...since it's not 'refined sugar'...but it looks pretty and it's just a tiny bit! :)
