Cheesy Spuds

This is great for when you have leftover pasta sauce, or if you want a quick and easy meal and let the Thermomix do all the work!

Ingredients:
 
4 - 8 washed potatoes
 
Method:
 
1. Add 1000ml of water to the bowl.
 
2. Place potatoes into the varoma steaming tray.
 
 
Place potatoes in varoma steaming tray
 
3. Cook for 60 minutes/Varoma/Speed 4.
 
 
Cook 60 minutes/Varoma/Speed 4
 
4. Meanwhile, preheat oven to 200 degrees.
5. Once the potatoes are cooked (a fork should slide in like butter), place the potatoes on pieces of crumpled aluminium foil on a baking tray (it holds the shape of the potato) and cut a 'cross' shape into it, but not through it, to give some room for the fillings.

6. Place fillings into the 'cross' cut out shape, i.e. in this order I placed, Bolognese sauce, diced bacon bits, pineapple and a heap of pizza cheese on top.

+ pizza cheese (blend of mozzarella/parmesan/tasty)
 
7. Place in oven and bake for 10 - 15 minutes or until cheese has melted and browning.
 
8. If you wish (and have them in your house!), top with sour cream, guacamole, salsa, and(or) cracked pepper.

TIm Tam Fudge

As I have been moving house, I have discovered a heeaaap load of stuff I forgot I had in my pantry. One of these things, Tim Tams! I have a problem with buying them every time they are on sale, thinking I will make some amazing dessert with them. So in my house, the Tim Tam packet is literally a packet that never runs out! It is also that time of the week where I make something for my work colleagues, so thought this would be perfect!

Blitz 200 grams White Chocolate and set aside
 
 
Add Condensed Milk, Butter, Sugar and Glucose and cook 8 mins/100 degrees/Speed 3
 
 
Scrape sides and base of bowl with a spatula and cook 20 minutes/Varoma/Speed 3
 
 
Fudge all caramelised!
 
 
Add set aside white chocolate and 7 x Tim Tams
 
 
Mix 10 secs/Speed3 (Reverse)
 
 
Pour and spread out in a silicon baking tray, and refrigerate for a few hours
 
 
Once set, I cut it into 8 x 6 squares

Dark Chocolate Yogo

My husband and brother LOVE Yogo! I came across this recipe, the texture is exactly like the storebought Yogo! And as always, the Thermomix is always a winner when it can make something that you love from the shops but is non preservative free!

Chocolate Yogo Recipe:
 
 
Our household prefers dark chocolate, so that's what I used! As it's all blitzed and melted together, it was the perfect opportunity to use up all the 'leftover' bits of chocolate which I had including half an Old Gold Easter bunny, dark chocolate melts and dark chocolate chips!!
 
I love that you can use any type of chocolate of your choice to mix up the flavours!
 
 
Blitz 200 grams chocolate of choice - 10 Seconds/Speed 8
 
 
Blitzed chocolate
 
 
Add 2 eggs, 500 grams milk (I used A2 Full cream), and 2 heaped tablespoons cornflour - I cooked for 8 minutes/90 degrees/Speed 4
 
 
Dark Chocolate Yogo!
 
I love that there is no extra sugar or cream used for this and that you can mix it up with different types of chocolate and milk of your choice. This tastes amazing piping hot and fresh out of the bowl, but even BETTER chilled for a few hours in the fridge - exactly like the storebought Yogo (but I definitely enjoyed this more since it's with my fave dark chocolate!!).

Perfect Eggs (Thermomix and Stovetop method)

My husband and I eat these eggs for breakfast most of the week! Most days it is quick and easy with toast with butter and vegemite, but on the days where I have more time, I also use these eggs for eggs benedict with smoked salmon or bacon.

I sometimes make the eggs look a bit fancier by putting the eggs in a silicon mould, or tied up in glad wrap with some herbs etc, but most of the time it's just easier to keep it simple with minimum effort!!
 
I've cooked this for years on the stovetop, and the timing of the cooking was one of the first things I had to figure out when I got the Thermomix to get my perfect eggs!! Gooey in the middle, but firm enough to easily peel off the shell!!
 
Both methods don't take too long, and you can prepare the toast whilst the eggs are being cooked. It is quick enough to make for a weekday breakfast before work!!

I use room temperature eggs, however you could use eggs straight from the fridge, it is slightly gooeir and may be a little more fiddly to peel.
 
Thermomix Method
 
1. Fill the bowl with water just covering the blades.
2. Place 2 - 6 room temperature eggs in the steaming basket and place lid and MC on.
3. Cook for 11 minutes/Varoma/Speed 1.
4. Once cooked, take the steaming basket out with the eggs and rinse under cold water (to stop them from cooking further).
5. Gently crack the egg shell and peel off carefully.
 
 
Stovetop Method
 
1. Fill a small to medium sized pot halfway with water (enough to cover the amount of eggs you want to cook).
2. Put the lid on, and switch the stove to high heat. Bring the water to the boil.
3. Once the water is at boiling point, take the lid off and carefully place desired number of room temperature eggs into pot (I use a slotted spoon to put them in to avoid any slight cracking). Boil for exactly 5 minutes (set your timer!) with the pot lid off. Once the 5 minutes is done, switch off the stove and take the eggs out immediately with a slotted spoon, and rinse in the sink with cold water (to stop them from cooking further).
4. Gently crack the egg shell and peel off carefully.

One Bowl Apple Cake

I felt like baking something, but something super quick, easy and with limited ingredients as I am still in the process of moving/unpacking and don't have all my gazillion baking ingredients in my new kitchen!
 
 
One Bowl Apple Cake
 
I always browse the 'most viewed' recipes in the Thermomix Recipe Community and came across this all in one apple cake:
 
 
The recipe indicates that it was adapted from a non thermomix recipe, tried some googling and couldn't find it, but came across heaps of one bowl apple cake recipes (never knew this was a 'thing') or I would have tried it earlier, pre-Thermomix days!
 
The recipe indicates 3 granny smith apples - I used 2 granny smith and 1 Fuji apple instead. I also didn't bother melting my butter (as I leave it out and it is quite soft anyway, and only mixed it for 30 seconds on Speed 5 - so it was a 30 second apple cake!!! The recipe also says to bake for 40 mins, however mine was ready in 20 minutes.
 
This recipe is great, the cake is so light and fluffy, however I would add diced chunks of apple to stir through in the end to add more texture (which the non Thermomix recipes would have). This is great for morning/afternoon tea, or for dessert with custard and/or icecream!! MMmmm!!!
 
 
Add 125 grams butter, 3 apples (peeled and quartered), 180 grams sugar, 300 grams self raising flour and 1 egg
 
 
Blitz for 30 seconds/Speed 5
 
 
Bake for 20 mins in a preheated 180 degree oven
 
 
One bowl apple cake!
 
 If you don't have a Thermomix...

In a large mixing bowl, add 125 grams melted butter, 3 apples (peeled, quartered and diced), 180 grams sugar, 300 grams self raising flour and 1 egg and mix together either with a wooden spoon or in an electric mixer until combined! Place in a square baking pan (or you could do round too), and bake for 20 minutes in a preheated 180 oven.
